The result, not surprisingly, are dishes brimming with authenticity and flavour. I catch up with them at their cosy restaurant and also savour many of the dishes that offer a stellar showcase of Kodagu’s rich culinary traditions. Hope you enjoy this episode, take care and stay safe. Kripal Amanna, Gourmet On The Road Crispy Bhendi Fry Juliennes of ladies finger coated in a simply flavoured rice flour batter. Rs. 190 (usd 2.6) for a full portion, roughly twice my tasting portion 7/10 Vegetable Cutlets You bite through the soft crunch of the crust into a tasty vegetable mash, one can detect the savoury sweetness of some fried onions in the mix. Rs. 190 (usd 2.6) for 5 cutlets 7.5/10 Kaipake Fry The bitter gourd is fried to minimise its bitter edge and then tossed in a mix of sliced onions, green chillies, chilli powder and fresh coriander with a heavy-handed drizzle of lemon juice that balances against the bitterness of the bitter gourd. Rs. 190 (usd 2.6) for a full portion, roughly twice my tasting portion 8/10 Kodava Koli Bhartad The chicken, cooked on the bone, is moist and flavourful with a potent peppery punch counterpointed with the tartness of the kachampuli, Coorg vinegar. Rs. 240 (usd 3.3) for a full portion, roughly twice my tasting portion 8.5/10 Kaima Unde Bhartad Crisp outside and juicy within, all that one tastes in these roundels is the flavour of the meat and the lush mouthfeel of the ghee. There is spicing, but subdued to celebrate the richness of the coarse meat. Rs. 275 (usd 3.7) for 8 roundels 8.5/10 Onake Erachi A traditional Kodava preparation of smoked pork, shredded and tossed with onions, chillies, spices and kachampuli. One can detect a faint ‘smokey’ veil on the bite. Rs. 350 (usd 4.8) for a full portion, roughly twice my tasting portion 8.5/10 Pandi Bhartad A preparation that breaks down readily in the mouth, releasing the flavours of the deep roasted Kodava ‘kartha’ masala. The fat has a deliciously jammy, sticky texture and has rendered well into the dish. Rs. 285 (usd 3.9) for a full portion, roughly twice my tasting portion 9/10 Thith Pandi A simple dish that draws inspiration from the erstwhile Kodava tradition of hunting, the meat is tossed simply in some paringe molu (bird eye chillies) and rock salt. Rs. 335 (usd 4.6) for a full portion, roughly twice my tasting portion 8.5/10 Kootu Curry A warming preparation of lentils and vegetables, wholesome and simple. Best mopped up with akki otti. Rs. 195 (usd 2.7) combo with a choice of staple 8/10 Koli Curry A delicious, homestyle chicken curry, the coconut milk in this preparation ensures the flavours are gentle and calming, quite unlike the robust pork dishes. Rs. 235 (usd 3.2) combo with a choice of staple 9/10 Pandhi Curry The signature dish here, the pandhi curry is stained dark with the kartha masala and the kachampuli, and the sort that breaks down in a hurry the moment you bite on it releasing the flavours of the masala laden with the fat of the meat.
