And so on our recent drive to Goa, we planned a lunch stop in this agricultural town in North Karnataka at Hotel Nartaki, the home of this iconic dish. Established 30 years ago by N Satish, a tailor turned restaurateur, in a tiny eatery that could only accommodate a few customers at a time. His wife would help him make the masala at home that he would cook into curries. Along the way, he came up with the concept of enne khaara largely to appease the spice-hungry tastebuds of the locals. The dish, in contrast to its fiery name, is a beautiful balance of flavours between the chilli heat (from a combination of 90% local Javannur chillies that also impart a striking colour to the dish, and 10% Guntur chillies) and the oil that rounds off all the sharp edges of the masala aided by the sourness of tomatoes. Mr N Satish has since passed on but the homemade tradition continues with his sons, Chetan and Chandan, in a much larger space today, aided by their mother and wives. If you love your meaty fare, Hotel Nartaki is certainly worth a visit, I would say even a detour should you be travelling in the area. I hope you enjoy this very special episode.
