Sulthan Bathery is for most an entry point into Wayanad, Kerala, and for travellers and locals alike, Wilton Restaurant in this town is perhaps the default stop for a meal. Out here, traditional cooks work alongside professional chefs to serve up a menu that is not only rooted in the culinary ethos of the land but is also open enough to assimilate other Indian and world flavours with serious proficiency. I spent four hours here on my recent Wayanad food tour, and after watching the coming together of some of the dishes (as seen in Part 1), I finally sat down to devour the incredible Seafood Sadya and their famous Wilton Biryani! 🤤 Plus, I try "some more" of their highly-rated local specialties.
