Seated at the counter, always with a turban tied on his head, led to the eatery being popularly referred to as the Thalappakatti (thalappa - turban; katti - tied) biryani shop as opposed to its original name, Anandha Vilas, and thus was born an establishment that today owns (yes owns, not franchises) nearly 70 outposts of Dindigul Thalappakatti across the world. I visit the kitchen here to watch the cooking of their famed biryani made with small-grained seeraga samba rice, and also visit one of their eight restaurants in Bengaluru to get a takeaway bundle of their signature dishes. You can taste the grainy crunch of the coconut and the pepper hit, the perfect snack to accompany an evening tipple. Rs. 253 (usd 3.1) 9/10 Peri Peri Chicken Chops The smokey, spiciness of the peri peri masala certainly perks things up on the palate alongside a zing of acidity, perhaps from some vinegar. The mayo helps assuage the spicy assault of the peri peri chicken. Rs. 300 (usd 4) 8/10 Kuchi Mutton Tender goat ribs, braised in a deep-roasted masala. The meat is soft and tender, encased in a thin veil of fat which adds to the flavour. The parotta makes for a handy bread to mop up the masala, this is a dish that epitomises the way in which DT cooks its mutton! A must-have! Rs. 288 (usd 3.8) 9/10 Kodaikanal Chicken Kozhambu The chicken is moist and calming in its flavours, the spicing is mellow and cradled in creamy coconut milk. You bite into flecks of coconut as you savour this kozhambu. Rs. 265 (usd 3.5) 8/10 Vegetable Biryani The seeraga samba rice heroes the Dindigul biryani powder that makes for the masala, the vegetables, beans, carrots and cauliflower, have been roasted in the masala thus imbuing in them the flavour of the biryani. Rs. 210 (usd 2.8) 7.5/10 Chicken Biryani The rice is flavoursome and the chicken definitely benefits when savoured in its company. Taste it with the biryani gravy and its endearing tomato-acidity if you like to moisten things up on the palate. The boiled egg helps stretch the protein component on the plate. Rs. 240 (usd 3.2) 8/10 Thalappakatti Boneless Mutton Biryani This is the biryani that’s synonymous with Dindigul Thalappakatti, and therefore it is no surprise that they do it extremely well. The seeraga samba has not just trapped the flavour of the spices, but also the smoky aromas of the meat. The meat is soft, tender and moist. This is the sort of deep-flavoured, satisfying biryani that needs no accompaniment, either the gravy or the raitha. A must-order if you’re a biryani buff.
