Borrowing a homestyle tradition of cooking dosas on individual tawas, “he pioneered” the technique of making a dose that was both roasted and steamed. And thus began the tradition of a scrumptiously delicious, crisp and fluffy breakfast treat, now known as the Mulbagal Dosa, that has put this temple town on the map for every dose aficionado. Special Masala Dosa Roasted first and then steamed, the form of the Mulbagal Dosa with its upturned edges mirrors the shape of the individual cast iron pans it is cooked in. Crusty and crisp on the outset, soft and spongy within, this dose comes across as a cross between a traditional version and an appam. Oozing ghee, the dose breaks in a crisp crackle that belies its thick and fluffy body. The chilli-warming, slightly sour notes of the red onion chutney smeared within complements the palya. For a spicier bite, taste the dose with the lentil chutney. Rs. 45 (usd 0.6) 10/10 Masala Vada Crisp and flavourful, makes for a tasty sidekick to the dosa. Rs. 6 (usd 0.1) 8/10 Special Plain Dosa The unique texture of the dose is heightened because there is none of the potato stuffing (palya) to moisten the dose; taste it before the masala dose to savour completely the texture of this unique creation. Rs. 40 (usd 0.5) 9/10 Onion Dosa More like a thick, fluffy uthappam. The hero here is the texture and flavour of the onion; you can taste the near caramelised, sweet notes of the fried onions, and also the moist bite of the translucent onions that haven’t been roasted to a crisp.
