When they found none, she decided to quit her job and set up a small eatery that would endeavour to dish out the flavours of their favourite chola bhatura from Delhi. And so seasoned cooks were hired from Delhi, a complex 58-spice masala developed to ensure authenticity of taste, the right size of chickpea sourced to convey the flavour of the spices, et al. Barely had this enterprise found its feet early last year when covid struck! I made a surprise visit to Gopaljee Café one afternoon in response to a plea from the eatery. Suffice to say my conversation with this passionate lady entrepreneur and tasting of the puffy bhature and ‘mazedaar’ chole compelled us to return to film an episode of Gourmet On The Road. Hope you enjoy this one, enough to pay them a visit if possible. Stay safe and happy eating! Chole Bhature The bhatura is light and puffy yet with a bit of strength, to match the tenacity of the 56-spice blend masala that is delicately warming yet has enough depth to linger on the palate. The chickpeas, cocooned in the flavour of the masala, a seasoning of oil, chilli and spices, are stained deep brown by some amla and cooked such that they retain their shape yet yield in a creamy texture to the bite. The mandatory topping of dry, spiced aloo (potatoes) adds a slightly tangy flavour to the dish. If you like it spicy, go for generous bites of the green chilli pickle in between mouthfuls of the chole bhature. If you like paneer, opt for the paneer chole bhature, which arrives with a paneer and coriander mince, stuffed into the bhaturas, and also atop the chole. Rs. 100 (usd 1.4) per plate, plain Rs. 125 (usd 1.7) per plate, with paneer 9/10 Lassi The lassi is thick and creamy, garnished with nuts, and also provides cooling respite if you have ingested more of the green chilli than you can handle. Rs. 50 (usd 0.7) 8/10 Gulab Jamun The way to end your meal if you have a sweet tooth is with their perfectly browned gulab jamuns.
