And when I learnt from Chef Subhankar Dhar about a hilsa festival underway at his restaurant, Esplanade, with prized specimens of the fish caught in the Padma river of Bangladesh, which incidentally is where most of the fish originate, I wasted no time in meeting him. We caught up over a delicious repast of hilsa dishes, an insightful introduction to this prized fish, and a showcase of Bengali cuisine’s delightful nuances.
