And for his main ingredient, he chose the humble gobi, cauliflower, given the popularity of gobi manchurian, but in an avatar that had not been seen before. Experimenting with a spice mix he first made at home, Usman Dry Gobi emerged. It wasn't long before he moved to a street cart, and eventually a streetside stall a few years ago. Great care is taken by him and his son, Usman, to procure the right quality and size of cauliflowers, that are cleaned thoroughly and spiced with a secret masala, before being fried meticulously in a bath of hot oil. The result is the crunchiest, most flavourful dry gobi one can eat in Mysuru, and the sheer number of customers who queue up at this stall every evening stand testament to the fact that Usman’s Dry Gobi has emerged as one of this palace city’s most popular street food creations over the years.
