How one wishes things had turned out differently, but alas! He wore Karnataka on his sleeve, and part of his vision was to promote young talent in Kannada cinema, a role that is now being bravely carried forward by his wife, Ashwini Puneeth Rajkumar. And when I recently received a call from her inviting me to a conversation on Aachar & Co., a film made by a near-all-women-team led by Sindhu Sreenivasa Murthy, somewhere, I felt this would be an apt continuation of my conversation with Appu Sir. We met over a delicious South Canara lunch at New Modern Hotel, an appropriate venue given the film’s setting in Bengaluru of the sixties. We discussed the film, which promises to be a witty family entertainer, rich in its cinematic value, food, pickles, family, a lot more… and also basked in the warming memory of our dearest Appu, Puneeth Rajkumar. In part one of this two part episode, he begins his trail at Mavalli Tiffin Rooms or MTR tasting a plain dosa and a masala dosa. He then visits Hotel Janatha and New Modern Hotel in South Bangalore for ragi and rava dosas. Vidyarthi Bhavan had to be part of this list, together with smaller eateries such as Davanagere Benne Dosa and the crowd favourite Taaza Thindi! GOURMET ON THE ROAD RATING MASALA DOSA - MTR the quintessential triangular MTR masala dose served with a tuppa da batlu. Perfectly roasted crust that glistens, stuffed tempered mashed potatoes with a side of thick, spicy chutney. this dosa is a ritual for many here and when you taste it you certainly understand why! Rs 86. 10/10 PLAIN DOSA - MTR this dose has a spicy green chutney smeared inside for that flavour burst in every bite. a simple dose done well. Rs 30. 6/10 RAVA DOSA - HOTEL JANATHA a paper thin rava or semolina dosa studded with flecks of onion. a really tasty dosa. the saagu makes for the right accompaniment but this dosa doesn't need one! The aloogadde palya is soft and mellow. the chutney and slightly sweet sambar with the dosa is a great combination. Rs 50. 8/10 RAGI DOSA this dosa looks wholesome. can feel the weight of the ragi as you tear into it. the saagu, a medley of veggies with a tangy taste brings this slightly dry dosa to life. Rs 50. 9/10 MASALA DOSA a traditional masala dosa in every sense, served with chutney. the dosa is roasted to a nice deep brown crisp around the edges, yet soft and fluffy within. The flavourful potato palya is gently tempered. South Indian Vegetarian Meals Located at VV Puram in South Bengaluru, New Modern Hotel is one of those rare, iconic establishments that has stood the test of time retaining it’s old world charm be it in its space and ambiance or in its recipes and way of cooking, simple honest homestyle fare. In this episode of Gourmet On The Road, Food Lovers Editor, Kripal Amanna, visits the eatery to escape the hustle and bustle of the city meeting with 3 generations of the family that has been running the restaurant for over 60 years. He then gets special access into the kitchen and to a step-by-step making of the most popular sweetmeat on their menu, the Badam Halwa. Following this he tastes the Thatte Idli, a wholesome South Canara-style Thali and the ghee laden Badam Halwa and another favourite dessert in the region called Chiroti Milk. GOURMET ON THE ROAD RATINGS THATTE IDLI generously smeared with ghee and served with a side of sambar and chutney, the thatte idli here is soft, almost breaking under its own weight. the chutney is rich in coconut with a mild chilli flavour while the sambar is thick, one in which you taste the hing and jaggery. rs 30. (0.40 usd) 8/10 VEG MEALS this vegetarian meal at NMH is a wholesome, south canara-style thali that is sure to remind you of home. this plate comes to you with a poori/ chapathi, vegetable of the day, sambar, saagu, tilisaaru, mosaru, rice, papad, pickle and majjige. a complete meal that’s honestly priced and delicious! rs 80. (1.15 usd) 8.5/10 CHIROTI MILK this popular dessert in the region is a puri made of semolina and maida that is crumbled and topped with sugar, badam powder and hot milk. the result is a sort of dessert that can bring a smile to anyone’s face. you taste the rich badam milk and occasionally crunchy bits of the ‘indian’ puff pastry. rs 42. (0.60 usd) 8.5/10 BADAM HALWA lusciously velvety, this dessert fill every pore of your palate with joy. served in small portions because it is super rich (1 part badam, 2 parts khova, 3 parts sugar and 6 parts ghee!) you can taste the granular texture of the almond and the fragrant flavour of cardamom. rs 50. (0.70 usd) 9/10 FILTER COFFEE Strong, piping hot filter coffee. just the sort you need after a meal here. order this with a side of the badam halwa. rs 23. An optimist though, he and his sons prepare to do what it takes to tide this South Canara vegetarian eatery through. Inspiration aside, I also take away a simple but nourishing anna-saaru meal in addition to some of their popular tiffins and sweets. The sambar, pleasing to the palate with its sweet acidity is perfectly suited to impregnate the idli with its mildly spicy fervour. Rs. 29 (usd 0.4) Khara Bath As you place the khara bath in your mouth, the savoury aroma of the onion is what you taste first, followed by the moist crunch of the tomato and the grainy bite of fresh coconut. Spice things up with the chutney. Rs. 25 (usd 0.3) Kesari Bath Redolent in the flavour of cloves, this isn't a kesari bath that’s dripping in ghee. Which makes for a tasty indulgence minus the guilt. Rs. 43 (usd 0.6) Anna Saaru The tomato plays a dual role in this pleasing South Canara tilli saaru, more popularly known as tomato rasama here in Bengaluru. The tomatoes are the foundation of this tart broth, and also offer a fruity crunch in the diced tomato that is perhaps added when the rasam is near cooked. Rs. 43 (usd 0.6) Mysore Pak Rich in ghee, the fresh mysore pak crumbles under its own weight. When you place it in the mouth, it dissolves into a lush, buttery pool of deliciousness.
