However the current scenario calls for an entirely new approach in food service, and in keeping with this, this revered South Bengaluru eatery has embraced takeaway as a new way of life, at least for the foreseeable future. I visit Vidyarthi Bhavan to document this change from the past and see for myself how its management is taking all steps necessary to ensure continuity of its delicious culinary traditions in as safe a manner as possible. Masala Dosa The masala dose is now folded twice as opposed to the VB classic one fold, an allowance that the eatery has made for the dose to be rolled into an aluminium foil in order to retain its temperature when savoured at home. The crispy crackle of the dose is now replaced by a whisper of a crunch, but the buttery flavours are still spot on. The dose oozes ghee, and the aloogadde palya is mildly seasoned and creamy. It helps to crispen the dose a bit on the pan just before eating. Rs. 50 (usd 0.7) Idli VB’s idlis are the grainy sort, perfect for ladling over chutney and piping hot sambar, before breaking it down to a delicious, spicy mash. If they’re too cold by the time they get to you, steam for a couple of minutes. Rs. 26 (usd 0.3) Uddin Vade The vade definitely suffers the most casualty when consumed in a takeaway format. Gone is its crisp crunch, that would yield to a porous bite. The only way to redeem the vada is to dunk it into a bowl of piping hot sambar and savour it with a dollop of spicy chutney. Rs. 26 (usd 0.3) Khara Bath The kharabath travels extremely well, given its moist texture. This tasty dish is studded with onions, fried lentils, coconut flakes and curry leaves, making for a playful medley of flavours and textures. Rs. 26 (usd 0.3) Kesari Bath End your meal with this luscious semolina preparation, the flavour of the pineapple and cloves is quite pronounced. The dish is mellow in its sweetness, save for the pop of extra sweetness when you bite into a toasted raisin. The chutney, although a little runny, is enhanced with a punch of spice and a delicious tempering. Rs 14 for one Idli and Rs 26 for vada. 8/10 Poori Saagu This poori saagu is a humble yet delicious dish at VB. A medley of beans, carrots, brinjal, and sweet pumpkin all harmoniously brought together. The pooris are light and fluffy as you would expect. The chutney adds a flavorful punch. Rs 36. 8/10 Khara bath Spicy and savoury, this semolina concoction with veggies like carrots, onions and the simple tempering has a pleasing texture. A dish that needs no accompaniment. Rs 26. 8/10 Kesari Bath This bath is laden with copious amounts of ghee, and tiny morsels of pineapple to give it that sweet, tart flavor. The intense flavour of clove cuts through the richness, making this an irresistible bite. Rs 26. 8/10 Saagu masala dosa This dosa is roasted perfectly with a crackly exterior and a soft interior. That slight tartness of the batter is present in every bite. The delicious saagu is a wholesome change from the typical potato stuffing. Rs 50. 9/10 Masala dosa A traditional masala dosa in every sense, served with chutney. The dosa is roasted to a nice deep brown crisp around the edges, yet soft and fluffy within. The flavourful potato palya is gently tempered. Rs 46. 10/10 Filter coffee Strong, robust coffee topped with a frothy cream. Pull your coffee to cool it down and end your meal in an authentic way.
